Could bread, the so-called staff of life, be causing millions of us to limp
along in ill health?
Researchers James Braly and Ron Hoggan have identified 187 medical conditions
caused by sensitivity to gluten, a protein found in wheat and other grains.
In their book Dangerous Grains they claim that the large proportion of wheat
in the western diet is making millions unwell. They identify gluten
sensitivity as the root cause of many cancers, psychiatric and brain
disorders. It is also linked to osteoporosis, thyroid conditions, learning
disorders, infertility and miscarriages.
Braly and Hoggan see an evolutionary cause to this unexpectedly common
allergy. Wheat, they say, has only been part of our diet for about half a
percent of human history. And, as yet, many of us have failed to adapt to
grains. Yet they make up more than half the daily calories in the average
diet, and grains represent more than one third of all food crops grown
worldwide.
When we digest gluten instead of it nourishing us, it can ‘cause the immune
system to react as if it is not a component of food, but an invading bug or
microbe’. This contributes to many modern diseases.
Braly and Hoggan believe that the prevalence of gluten in our diets has
allowed many who are allergic to it to develop a tolerance. The result is
that symptoms can be masked for years, only to emerge in later life as
diabetes or depression.
